- Whole wheat gluten-free pasta

- 100 g basil (or 1 large bunch)

- 2 cloves of garlic

- 75 gr extra virgin olive oil

- 2 tbsp young cheese (grated)

- 75 g pine nuts

- Pinch of coarse Celtic salt and black pepper

- 200 g cherry tomatoes

- 125 g arugula


Preparation method

1. Place the cherry tomatoes in an oven dish and sprinkle them lightly with olive oil and sea salt. Roast them for 20 minutes at 180 degrees. Roast the pine nuts in a dry frying pan. (be careful! Because these burn quickly)

2. Place the basil, garlic, olive oil, grated cheese, pine nuts and sea salt in the blender. Taste to see if it has enough seasoning and add salt if necessary.

3. Cook the pasta according to the instructions on the package. Place the pasta in a large bowl or bowl. Mix the pesto well with the pasta and then add the cherry tomatoes.

4. You can use the arugula as a topping for the garnish.
