Kale or kale is number 2 of the healthiest vegetables! This green leafy vegetable is extremely rich in vitamin K, vitamin A and vitamin C.

Recipe

Ingredients

- 150 g kale, finely chopped

- 1/2 organic apple

- 150g quinoa

- Handful of walnuts, coarsely chopped

- 30 g pomegranate seeds

- 2 small / or 1 large sweet potato(s)


Dressing

- 1 tsp apple cider vinegar

- 1 tsp maple syrup

- 1 tsp olive oil

- 1 tsp lemon juice

- Pinch of salt and pepper

Preparation method

1. Preheat the oven to 200 degrees Celsius. And bring the quinoa and water to the boil.

2. Cut the sweet potato into cubes or slices. And put it in the oven for 30 minutes.

3. Massage the kale with some olive oil and Celtic sea salt.

4. When ready, add the quinoa to the kale.

5. Cut the apple into thin slices.

6. Add the sweet potato to the salad.

7. Decorate the salad with the apple slices, walnuts and pomegranate.

8. Finally, make the dressing and spread it over the entire salad.
