Brown rice is already a lot healthier than white rice, but black rice appears to have even more health benefits than the brown variety. With both brown rice and black rice, the nutritious membrane remains around the grain, but the darkest variant has slightly more nutrients.

Recipe

Ingredients

- 200 grams of black rice

- 200 g edamame beans

- 1 avocado, cut into cubes

- 3 spring onions

- 1/2 cucumber, cut into cubes

- 15 g coriander

- 70 g red cabbage, cut into strips


Dressing

- 2 tsp white miso paste

- 5 g grated ginger

- 1 tbsp sesame seeds

- 1 tsp olive oil

- 1 tsp maple syrup

Preparation method

1. Cook your black rice according to the instructions on the package. Remove the rice from the heat and let it cool. Drain and set aside while you continue with the recipe.

2. To make the dressing, mix the miso paste, ginger, sesame seeds, olive oil and maple syrup in a bowl until combined.

3. Then add the cooked black rice, edamame, avocado, spring onion, cucumber, coriander and red cabbage in a large kitchen bowl. Pour the dressing over the salad and mix everything well. Serve with a little extra coriander if desired.
