Peppers are a good source of the mineral potassium. This helps to keep your heart and blood vessels in perfect condition. Potassium regulates the fluid balance in your body.

Recipe

Ingredients

- 1 red onion

- 1 clove of garlic

- 1 pepper pp

- 300 g lentils

- 3 tsp tomato puree

- 1/2 jalepeño

- Handful of cherry tomatoes

- handful of spinach

- Handful of coriander

- Pepper and salt

Preparation method

1. Preheat the oven to 200°C.

2. Cut the tops off the peppers and remove the seeds.

3. Brush the peppers with olive oil and place them in the oven for 15 minutes.

4. Finely chop the onions and garlic. Heat the oil in a frying pan and fry the onion and garlic.

5. Add the tomato puree to the pan.

6. Also add the lentils and stir well.

7. Cut the cherry tomatoes in half and the jalepeńo into thin slices.

8. Add the cherry tomatoes, spinach and jalepeño to the pan. Stir well and let it simmer for a while.

9. Fill the peppers with the lentil stew and top with some coriander.
